My daughter loves veggie burgers. When she was little I used to buy Money’s mushroom’s burgers. Then they disappeared from grocery stores here in Canada. So I searched high and low and tried making several recipes until I came across this one. I tweaked it and made it my own. I serve it with sauteed apple slices and onions, topped with avocado. It’s amazing.

Dry Ingredients

  • 1 can of chickpeas
  • 1/2 cup shredded carrot
  • 1/2 cup panko bread crumbs
  • 1/4 cup wheat germ
  • 1 garlic clove minced
  • 1 Tbsp Chia Seeds
  • 1 1/2 cups fresh spinach
  • 3/4 cup mushrooms diced small
  • 1/2 cup onions diced small
  • 1 tsp smoked paprika
  • 1/2 tps coriander
  • 1/2 tsp cumin
  • 1/2 tsp red pepper flakes (optional)

Wet Ingredients

  • 2 eggs
  • 2 Tbsp olive oil
  1. Rinse chickpeas then add to food processor. Add the minced garlic and blend till smooth.
  2. Empty the bean mixture into a medium-sized bowl. Put shredded carrots and spinach that you have chopped up smaller also into the bowl.
  3. Saute the mushrooms and onions, then let cool slightly. And also add to the bowl. I sometimes also add peppers to the mix.
  4. With a large spoon stir in the eggs, chia seeds, and all the seasonings with bread crumbs, and wheat germ until well combined.
  5. By hand divide into 4-6 patties. Flatten the patties to about 1/2 inch thickness.
  6. In a frying pan preheat the olive oil. Then fry for about 3-4 minutes per side. Until they are golden brown and slightly crisp.
  7. Serve on a fresh bun with your choice of toppings. We love sauteed apple slices and onions with avocado or guacamole. Enjoy!
